Wild Game Recipe: Elk Sliders

It’s that time of year, where grilling is the answer. Our friends at Nevada Foodies have created another amazing recipe that we wanted to share. We’ve seriously made this recipe a half dozen times this summer and we do not see that slowing down. Whether you’re having dinner guests over, or simply cooking for you and your family these sliders are the answer.

Makes 18-20 sliders

Ingredients

For the Sliders

  • 4 Chorizo Links
  • 2 lbs ground Elk
  • 20 slices Havarti cheese
  • 2 cups baby arugula
  • 20 mini rolls or hamburger buns
  • 2 tablespoons butter melted

Slider Dry Rub Seasoning

  • 2 teaspoons paprika
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon coriander

Pickled Red Onion

  • 1 large red onion thinly sliced
  • 1 cup cider vinegar
  • 1 tablespoon sugar
  • 1 1/2 teaspoon kosher salt
  • 2 tablespoons whole peppercorns

Whisk together vinegar, sugar and salt in a bowl until dissolved. Place onion in a jar with peppercorns and pour vinegar over the top. Cover and refrigerate for 24 hours before using.
